In a small saucepan over medium-low heat, combine almond milk, sugar and salt.
Stir constantly until sugar is disoved.
Beat egg yolks.
After sugar is disolved, pour a steady stream of the mixture into the egg yolks, whisking constantly.
Return mixture to stove over low heat. Stir constantly until the mixture thickens; 5-15 minutes.
Add gelatin and stir until it desolves.
Remove from heat. Add vanilla and vodka.
Churn and freeze.
